For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat. Preheat oven to 400°F (200°C).
- In a bowl, whisk together olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- Place chicken in a shallow dish and pour half the marinade over it. Let sit for 10 minutes.
- Toss vegetables with remaining marinade and spread on a baking sheet. Roast for 20 minutes.
- Grill chicken for 6-7 minutes per side or until internal temperature reaches 165°F (74°C).
- Serve grilled chicken with roasted vegetables.
