Baked Feta Pasta

Description

A creamy and tangy pasta dish made with baked feta cheese and cherry tomatoes.


Ingredients

For the Crust:

  • 8 oz block of feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 tsp red pepper flakes
  • 8 oz pasta (penne or similar)
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, place the feta block in the center and surround it with cherry tomatoes and minced garlic.
  3. Drizzle olive oil over the feta and tomatoes, then sprinkle with red pepper flakes, salt, and pepper.
  4. Bake for 25-30 minutes until the tomatoes burst and the feta softens.
  5. While baking, cook the pasta according to package instructions and reserve 1/2 cup of pasta water.
  6. Remove the baking dish from the oven and mash the feta and tomatoes together until creamy.
  7. Toss the cooked pasta with the feta-tomato mixture, adding pasta water as needed to reach desired consistency.
  8. Garnish with fresh basil before serving.

Notes

You can customize the seasonings to taste.
