For the Crust:
- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
- 1 avocado, sliced
- 1/4 cup red onion, thinly sliced
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Roast for 25-30 minutes until tender.
- Season chicken breasts with salt and pepper. Grill or pan-sear until fully cooked, about 6-7 minutes per side. Brush with BBQ sauce during the last few minutes of cooking.
- Slice the cooked chicken into strips. Assemble bowls with quinoa or rice, roasted sweet potatoes, BBQ chicken, avocado slices, red onion, and fresh cilantro.
- Drizzle with extra BBQ sauce if desired and serve warm.
