Beef Enchilada Casserole

Description

A delicious and easy-to-make layered casserole with all the flavors of traditional beef enchiladas.


Ingredients

For the Crust:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) red enchilada sauce
  • 8 corn tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional)
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, brown ground beef with onion and garlic. Drain excess fat.
  3. Stir in taco seasoning, black beans, and half the enchilada sauce. Simmer for 5 minutes.
  4. Layer half the tortilla pieces in a greased 9×13 baking dish. Top with half the beef mixture and half the cheese.
  5. Repeat layers with remaining tortillas, beef mixture, and cheese.
  6. Drizzle remaining enchilada sauce over top.
  7. Bake uncovered for 20-25 minutes until bubbly and cheese is melted.
  8. Let stand 5 minutes before serving. Garnish with sour cream and cilantro if desired.

Notes

You can customize the seasonings to taste.
