For the Crust:
- 4 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/4 cup milk
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a 9-inch baking dish.
- In a large bowl, mix blueberries, 1/2 cup sugar, lemon juice, and vanilla. Pour into the prepared baking dish.
- In another bowl, whisk flour, 1/4 cup sugar, baking powder, and salt. Stir in melted butter and milk until just combined.
- Drop spoonfuls of the batter over the blueberry mixture, spreading gently.
- Bake for 30-35 minutes or until the topping is golden and the blueberries are bubbly.
- Let cool slightly before serving.
