For the Crust:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in the dry ingredients until just combined. Gently fold in blueberries.
  5. Drop tablespoon-sized dough onto the baking sheet, spacing them 2 inches apart.
  6. Bake for 10-12 minutes or until edges are lightly golden. Let cool on the sheet for 5 minutes before transferring to a wire rack.
