For the Crust:

  • 4 large croissants, torn into pieces
  • 1 cup fresh blueberries
  • 4 large eggs
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 2 tbsp powdered sugar (for dusting)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Arrange torn croissant pieces in the prepared dish and sprinkle blueberries evenly over the top.
  3. In a bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
  4. Pour the egg mixture evenly over the croissants, pressing down lightly to ensure all pieces are soaked.
  5. Bake for 30-35 minutes until golden brown and set in the center.
  6. Let cool for 5 minutes, then dust with powdered sugar before serving.
