For the Crust:

- 3/4 cup vegetable oil

- 2 teaspoons vanilla extract
- 2 cups grated carrots
- 1 cup chopped walnuts
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat sugar, oil, eggs, and vanilla until smooth. Gradually mix in dry ingredients.
- Fold in grated carrots and walnuts. Pour batter into prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
