For the Crust:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups peeled and diced potatoes
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/4 cup sour cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
Instructions
1. Prepare the Crust:
- In a large pot, brown the ground beef with the onion and garlic over medium heat until the beef is fully cooked. Drain excess fat.
- Add the chicken broth and diced potatoes to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until the potatoes are tender.
- In a separate bowl, whisk the flour into the milk until smooth. Slowly stir the milk mixture into the soup. Cook and stir until thickened, about 3-5 minutes.
- Reduce heat to low and stir in the cheddar cheese, sour cream, salt, pepper, and paprika. Continue stirring until the cheese is fully melted and the soup is creamy.
- Serve hot, garnished with additional cheese or toppings if desired.
