For the Crust:
- 1 large head cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Steam or boil cauliflower florets until just tender, about 5-7 minutes. Drain well and arrange in the baking dish.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Cook, stirring constantly, until the sauce thickens, about 3-5 minutes.
- Remove from heat and stir in cheddar cheese, garlic powder, salt, and pepper until cheese is melted.
- Pour cheese sauce over cauliflower in the baking dish. Sprinkle with Parmesan cheese and breadcrumbs.
- Bake for 20-25 minutes, or until bubbly and golden brown on top.
