Juicy chicken meatballs stuffed with mozzarella cheese and coated in marinara sauce, topped with more cheese and baked to perfection.

For the Crust:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz mozzarella cheese, cut into small cubes
- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 2 tbsp chopped fresh parsley
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, oregano, basil, salt, and pepper. Mix well.
- Shape the mixture into meatballs, pressing a mozzarella cube into the center of each and sealing it completely.
- Place meatballs on the prepared baking sheet and bake for 20 minutes.
- Remove from oven, spoon marinara sauce over each meatball, and sprinkle with shredded mozzarella.
- Return to oven and bake for another 5-10 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
