Cheesy Chicken Parmesan Meatballs

Description

Juicy chicken meatballs stuffed with mozzarella cheese and coated in marinara sauce, topped with more cheese and baked to perfection.

For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz mozzarella cheese, cut into small cubes
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, oregano, basil, salt, and pepper. Mix well.
  3. Shape the mixture into meatballs, pressing a mozzarella cube into the center of each and sealing it completely.
  4. Place meatballs on the prepared baking sheet and bake for 20 minutes.
  5. Remove from oven, spoon marinara sauce over each meatball, and sprinkle with shredded mozzarella.
  6. Return to oven and bake for another 5-10 minutes until cheese is melted and bubbly.
  7. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
