For the Crust:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)
  • 1/2 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, and Worcestershire sauce until well combined.
  3. Press the meat mixture evenly into the prepared baking dish.
  4. Spread ketchup, brown sugar, and mustard mixture over the meatloaf layer.
  5. Arrange mixed vegetables evenly over the top.
  6. Bake for 25 minutes, then sprinkle with shredded cheddar cheese and bake for an additional 5 minutes or until cheese is melted.
  7. Let rest for 5 minutes before serving.
