Crispy fried burritos filled with seasoned chicken, cheese, and beans.

For the Crust:

  • 2 cups cooked shredded chicken
  • 1 cup refried beans
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 large flour tortillas
  • Vegetable oil for frying
  • Sour cream and salsa for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, mix shredded chicken, refried beans, cheese, onions, bell peppers, cumin, and chili powder.
  2. Divide the mixture evenly among the tortillas, placing it in the center of each.
  3. Fold the sides of the tortillas inward, then roll tightly to form a burrito.
  4. Heat oil in a deep skillet over medium-high heat. Fry each chimichanga until golden brown, about 2-3 minutes per side.
  5. Drain on paper towels and serve hot with sour cream and salsa.

Notes
