Chicken Scampi with Garlic Parmesan Rice

Description

A delicious and creamy chicken scampi served over garlic parmesan rice for a comforting meal.


Ingredients

For the Crust:

  • 1 lb boneless, skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning
  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large skillet, heat olive oil over medium heat. Add chicken slices and cook until golden brown and cooked through, about 5-6 minutes per side. Remove and set aside.
  2. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth, heavy cream, lemon juice, and Italian seasoning. Bring to a simmer.
  3. Return the cooked chicken to the skillet and stir in parmesan cheese. Simmer for 2-3 minutes until the sauce thickens slightly.
  4. Meanwhile, cook rice according to package instructions. Once cooked, stir in butter and additional minced garlic if desired.
  5. Serve the chicken scampi over the garlic parmesan rice. Garnish with extra parmesan if desired.

Notes

You can customize the seasonings to taste.
