A delicious and creamy chicken scampi served over garlic parmesan rice for a comforting meal.

For the Crust:
- 1 lb boneless, skinless chicken breasts, sliced
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Italian seasoning
- 1 cup long-grain white rice
- 2 cups water
- 2 tbsp butter
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large skillet, heat olive oil over medium heat. Add chicken slices and cook until golden brown and cooked through, about 5-6 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth, heavy cream, lemon juice, and Italian seasoning. Bring to a simmer.
- Return the cooked chicken to the skillet and stir in parmesan cheese. Simmer for 2-3 minutes until the sauce thickens slightly.
- Meanwhile, cook rice according to package instructions. Once cooked, stir in butter and additional minced garlic if desired.
- Serve the chicken scampi over the garlic parmesan rice. Garnish with extra parmesan if desired.
