For the Crust:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup hot water
- 1/2 cup chocolate chips (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a mini cake pan.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, mix sugar, oil, egg, and vanilla until smooth.
- Alternately add the dry ingredients and buttermilk to the wet mixture, stirring until combined.
- Stir in hot water until the batter is smooth. Fold in chocolate chips if using.
- Pour batter into the prepared pan, filling each cavity about 3/4 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
