For the Crust:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) corn, drained
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 4 cups beef broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the onion, garlic, and bell pepper to the pot. Cook until vegetables are softened, about 5 minutes.
- Stir in the diced tomatoes, corn, kidney beans, pinto beans, and beef broth.
- Season with chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Taste and adjust seasonings as needed. Serve hot.
