For the Crust:

  • 8 oz pasta (such as penne or rotini)
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (10 oz) can Rotel tomatoes (original or mild)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat if needed.
  3. Add diced onion and minced garlic to the skillet. Cook until onion is softened, about 3-4 minutes.
  4. Stir in Rotel tomatoes (undrained), heavy cream, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  5. Add cooked pasta and shredded cheddar cheese to the skillet. Stir until cheese is melted and pasta is well coated.
  6. Garnish with fresh cilantro or parsley if desired. Serve warm.

Notes

You can customize the seasonings to taste.
