For the Crust:
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
Instructions
1. Prepare the Crust:
- In a large bowl, mix ground turkey, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper until well combined.
- Form the mixture into small meatballs, about 1-inch in diameter.
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides and cooked through, about 10-12 minutes.
- Remove meatballs from skillet and set aside. In the same skillet, add spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and stir in parmesan cheese. Simmer for 3-4 minutes until the sauce thickens slightly.
- Return meatballs to the skillet, coat with the creamy spinach sauce, and serve warm.
