For the Crust:
- 1 lb salmon fillet, cut into bite-sized pieces
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tsp honey
- 1 tbsp vegetable oil
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season salmon pieces with salt and pepper. Dredge each piece in cornstarch, dip in beaten eggs, then coat with panko breadcrumbs.
- Heat oil in a skillet over medium-high heat. Pan-fry salmon bites for 1-2 minutes per side until golden brown, then transfer to the baking sheet.
- Bake for 8-10 minutes until salmon is cooked through.
- In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey to make the bang bang sauce.
- Drizzle sauce over the crispy salmon bites before serving.
