For the Crust:
- 2 lbs boneless, skinless chicken thighs
- 1/2 cup bourbon
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1/2 tsp black pepper
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (optional, for slurry)
Instructions
1. Prepare the Crust:
- Place chicken thighs in the crock pot.
- In a bowl, whisk together bourbon, soy sauce, brown sugar, honey, garlic, ginger, and black pepper. Pour over chicken.
- Cover and cook on low for 5-6 hours or high for 3-4 hours.
- If desired, mix cornstarch and water to create a slurry, then stir into the crock pot during the last 30 minutes to thicken the sauce.
- Serve over rice or with steamed vegetables.
