For the Crust:
- 1 tbsp olive oil
- 1 lb ground turkey (or chicken)
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) red enchilada sauce
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it apart with a spoon.
- Add bell pepper, onion, and garlic. Cook for 5 minutes until vegetables soften.
- Stir in black beans, enchilada sauce, cumin, and chili powder. Simmer for 10 minutes.
- Sprinkle cheese over the top, cover, and let melt for 2-3 minutes.
- Garnish with fresh cilantro before serving.
