For the Crust:
- 1 cup dried green or brown lentils, rinsed
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until softened.
- Add garlic, thyme, and smoked paprika. Cook for 1 minute until fragrant.
- Stir in lentils, potatoes, vegetable broth, and water. Bring to a boil.
- Reduce heat to low, cover, and simmer for 25-30 minutes until lentils and potatoes are tender.
- Season with salt and pepper to taste. Serve hot.
