For the Crust:

  • 1 lb boneless, skinless chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through, about 6-8 minutes.
  2. Add minced garlic, oregano, salt, and black pepper to the skillet. Stir and cook for 1 minute until fragrant.
  3. Pour in orzo and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes or until orzo is tender.
  4. Stir in fresh spinach and cook until wilted, about 2 minutes.
  5. Remove from heat and sprinkle with Parmesan cheese before serving.
