Description
This dish is always a huge hit with my dinner party guests. Juicy roasted chicken infused with garlic, butter, and fresh herbs.

For the Crust:
- 1 whole chicken (4–5 lbs)
- 4 tbsp unsalted butter, softened
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, halved
- 1 small onion, quartered
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C).
- In a bowl, mix butter, garlic, rosemary, thyme, salt, and pepper.
- Pat the chicken dry and rub the butter mixture all over, including under the skin.
- Stuff the cavity with lemon halves and onion quarters.
- Place chicken on a roasting pan and roast for 1 hour or until internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving.
