Garlic Butter Herb Roasted Chicken

Description

This dish is always a huge hit with my dinner party guests. Juicy roasted chicken infused with garlic, butter, and fresh herbs.


Ingredients

For the Crust:

  • 1 whole chicken (45 lbs)
  • 4 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved
  • 1 small onion, quartered

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, mix butter, garlic, rosemary, thyme, salt, and pepper.
  3. Pat the chicken dry and rub the butter mixture all over, including under the skin.
  4. Stuff the cavity with lemon halves and onion quarters.
  5. Place chicken on a roasting pan and roast for 1 hour or until internal temperature reaches 165°F (74°C).
  6. Let rest for 10 minutes before carving.

Notes

You can customize the seasonings to taste.
