For the Crust:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- In a bowl, mix 1 cup flour, 1/4 cup powdered sugar, and butter until crumbly. Press into the prepared pan.
- Bake crust for 15 minutes or until lightly golden.
- In another bowl, whisk eggs, granulated sugar, 2 tablespoons flour, baking powder, lemon juice, and zest until smooth.
- Pour lemon mixture over the baked crust and return to the oven for 20 minutes or until set.
- Cool completely, then dust with powdered sugar before cutting into bars.
