For the Crust:

  • 1 lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup diced onion
  • 1/2 cup diced pickles
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sugar-free ketchup
  • 1 tbsp mustard
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a skillet, brown the ground beef with onions over medium heat until fully cooked. Drain excess fat.
  3. In a large bowl, mix together the cooked beef, bacon, pickles, mayonnaise, ketchup, mustard, garlic powder, salt, and pepper.
  4. Spread the mixture evenly in the prepared baking dish.
  5. In a small bowl, whisk the eggs and pour over the casserole mixture.
  6. Sprinkle shredded cheddar cheese evenly on top.
  7. Bake for 25-30 minutes or until the cheese is bubbly and lightly browned.
  8. Let cool for 5 minutes before serving.
