A flavorful and easy Mediterranean-inspired dish with baked feta, eggs, and fresh vegetables.

For the Crust:
- 8 oz block of feta cheese
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted
- 1/4 cup red onion, thinly sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Fresh basil for garnish
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a baking dish, place the feta block in the center. Surround it with cherry tomatoes, olives, and red onion.
- Drizzle olive oil over the feta and vegetables. Sprinkle with oregano, red pepper flakes, salt, and pepper.
- Bake for 15 minutes until the feta softens and the tomatoes start to burst.
- Remove from oven and create 4 small wells in the feta. Crack an egg into each well.
- Return to the oven and bake for another 10-12 minutes, or until the eggs are set to your liking.
- Garnish with fresh basil and serve warm with crusty bread.
