For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 2 medium zucchinis, sliced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, zucchini, bell pepper, onion, garlic, olive oil, oregano, paprika, cumin, salt, and pepper. Toss to coat evenly.
- Transfer the mixture to a baking dish and spread evenly.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
- Sprinkle with feta cheese and return to oven for 2-3 minutes until cheese softens.
- Garnish with fresh parsley before serving.
