For the Crust:
- 2 cups shredded coconut
- 1 cup chopped pecans
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- In a large bowl, mix shredded coconut and chopped pecans. Set aside.
- In a saucepan over medium heat, melt butter. Add brown sugar, granulated sugar, milk, vanilla, and salt. Stir constantly until mixture comes to a boil.
- Boil for 2 minutes, then remove from heat. Pour hot mixture over coconut and pecans. Stir quickly to combine.
- Drop tablespoon-sized portions onto parchment paper. Let cool completely until firm.
