For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cherry tomatoes, halved
  • 1 red onion, sliced
  • 2 cups broccoli florets

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together balsamic vinegar, olive oil, honey, oregano, thyme, salt, and pepper.
  3. Place chicken breasts in a large bowl and pour half of the balsamic mixture over them, coating evenly.
  4. Arrange chicken, cherry tomatoes, red onion, and broccoli on a sheet pan in a single layer.
  5. Drizzle the remaining balsamic mixture over the vegetables.
  6. Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender.
  7. Serve warm and enjoy.
