For the Crust:
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup frozen peas (optional)
- 1/2 cup diced bell peppers (optional)
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until lightly browned, about 5 minutes.
- In a bowl, mix together BBQ sauce, honey, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Add rice to the skillet and stir to coat with any remaining oil. Pour in chicken broth and the BBQ sauce mixture, stirring to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and liquid is absorbed.
- If using, stir in peas and bell peppers during the last 5 minutes of cooking.
- Remove from heat and let stand covered for 5 minutes before serving.
