For the Crust:

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp cornstarch (optional, for thickening)

Instructions

1. Prepare the Crust:

  1. Place chicken thighs, carrots, celery, onion, and garlic in the slow cooker.
  2. Pour chicken broth over the ingredients and add thyme, rosemary, bay leaf, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender.
  4. If desired, mix cornstarch with 2 tbsp water and stir into the stew to thicken. Cook for an additional 15 minutes.
  5. Remove bay leaf before serving. Adjust seasoning if needed.

Notes
