For the Crust:
- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced bell peppers
- 1/2 cup diced onions
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tbsp taco seasoning
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup crushed tortilla chips
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, combine shredded chicken, black beans, corn, bell peppers, onions, diced tomatoes with green chilies, sour cream, taco seasoning, cumin, garlic powder, salt, and black pepper. Mix well.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Sprinkle shredded cheddar cheese and crushed tortilla chips on top.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
