For the Crust:
- 4 salmon fillets (6 oz each)
- 2 cups fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix together spinach, cream cheese, Parmesan cheese, garlic, lemon zest, salt, black pepper, and red pepper flakes (if using).
- Cut a pocket into the side of each salmon fillet, being careful not to cut all the way through.
- Stuff each salmon fillet with the spinach mixture, pressing gently to seal the edges.
- Brush the outside of each fillet with olive oil and place on the prepared baking sheet.
- Bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve immediately and enjoy.
