For the Crust:
- 1 lb ground chicken
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/4 cup green onions, chopped
- 1/4 cup carrots, shredded
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tsp brown sugar
- 1/2 tsp red pepper flakes
- 8 large lettuce leaves (butter or romaine)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanuts, crushed
Instructions
1. Prepare the Crust:
- Heat olive oil in a skillet over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add ground chicken and cook until browned, breaking it into small pieces as it cooks.
- Stir in green onions, carrots, soy sauce, fish sauce, lime juice, brown sugar, and red pepper flakes. Cook for 3-4 minutes until well combined.
- Spoon the chicken mixture into lettuce leaves. Garnish with cilantro and crushed peanuts before serving.
